One of my recent favorite additions to my cooking: Tomato Vodka Cream Sauce. Its delicious and great for a fancy meal with friends or a quick sauce for dinner!
two small or one medium yellow onion(s)
3 cloves garlic
generous amounts of good extra virgin olive oil
1 1/2 tsp dried oregano
1/2 tsp crushed red pepper flakes
1 cup vodka
56 oz (two 28 oz cans) of fire-roasted tomatoes (preferrably one crushed, one diced)
sea salt
fresh oregano
parmigiano reggiano
1/2 cup heavy cream
Dice onions to a small dice
Heat pan to medium-low
Add olive oil
Sautee onions to light brown in large pot
Peel and crush garlic (with side of a knife) or in garlic press, add to onions in pan.
Cook until garlic is lightly browned and smells cooked (less raw garlic smell)
Add dried oregano and red pepper flakes
Cook a minute or two until oregano flavor blooms and smells like oregano
Add vodka and cook several minutes until mixture reduced by about half and no longer smells like vodka (indicates alcohol has cooked off)
Add cans of tomato sauce
Simmer as desired; flavors will incorporate over time
5-10 minutes before serving or finishing cooking, add cream, fresh oregano, parmigiano reggiano and more olive oil
Great to eat over ziti, orrechiette, linguini…today or later.. tutto bene!
Quick fix - I’ve also made it with whole milk instead of cream, without fresh oregano, and without vodka. Also delicious!
